The Ice Cream Man’s Homemade Choco Tacos
Here’s a mid-90’s flick for you that may have gone under your radar. The Ice Cream Man follows Clint Howard as the lead psychopathic killer/ice cream man in a small town where years ago he witnessed a brutal death that drove him insane. While this movie is definitely more appreciated now for its unintentional humor than it’s cinematic brilliance (or lack there of), it’s a good campy treat that pairs with, well, ice cream. And we found a way to bring our favorite ice cream truck snack right to your kitchen.
Homemade Choco Tacos-
Vanilla ice cream, softened
Hard shell tacos
1 cup chocolate chips
1 1/2 Tbsp butter
1 1/2 Tbsp corn syrup
Splash of milk
Red cookie frosting
Fill taco shells with softened ice cream and freeze until hardened.
Meanwhile, melt chocolate chips, butter, and corn syrup in the microwave in 30 second intervals. Add a splash of milk to thin if needed.
Remove tacos from the freezer one at a time and, working quickly, dip the tacos in the chocolate. We found it easiest to spread the chocolate on the tacos with a spatula rather than dip them completely. If the ice cream starts to melt, just put the taco back in the freezer for a few minutes and dip again. If you are using nuts, dip the tacos while the chocolate is still wet and then return to the freezer.
We used chopped peanuts for half of our tacos and cookie frosting for the other half.
Once the chocolate is set up and the ice cream has frozen again, your tacos are ready!
You can enjoy them with nuts.
Or without. If you are using cookie icing, make sure to refreeze the tacos after dipping in chocolate. Once the chocolate sets up, drizzle with icing and refreeze.
