Sheri Moon Pies

Smart, creative, talented, fashionable and all around knock out, what’s not to love about Sheri Moon Zombie? As big fans of her clothing line and even bigger fans of the characters she’s portrayed in recent films, we were so excited to come up with a few recipes in honor of a woman we look up to. Our banana Sheri Moon Pie recipe can easily be adapted to chocolate or vanilla (just substitute semi sweet chocolate chips or vanilla extract for banana extract). So in anticipation of The Lords of Salem, lets get started with dessert!


8 tablespoons butter
1 cup powdered sugar
2 teaspoons vanilla extract
1 cup all-purpose flour

For the marshmallows:

3 envelopes of Knox gelatin
1/2 cup cold water
2 cups granulated sugar
1/2 cup powdered sugar
2/3 cups corn syrup
1/4 cup water
1/4 teaspoon salt
1 tablespoon vanilla extract

For the coating:
2 cups white chocolate chips
1/2 cup vegetable oil
2 teaspoons banana extract


Preheat oven to 350F.

In a mixer, cream the butter and sugar on medium until smooth. Add the vanilla and mix until fluffy. Slowly pour in the flour on low speed and blend until combined. Form the dough into a ball and wrap it in plastic wrap. Refrigerate for at least 2 hours.

On a floured surface, roll the dough out to ⅛-inch thick. Use the rim of a drinking glass to stamp out circles and place on a cookie sheet. Bake for 12 minutes or until lightly golden.

For the marshmallows:

In electric mixer bowl, pour gelatin over 1/2 cup cold water. Soak for 10 minutes. Combine sugar, corn syrup and 1/4 cup water in a small saucepan. Bring to a boil. Pour boiling syrup into gelatin and mix at high speed. Add the salt & vanilla and beat on medium for 12 minutes. Pour into piping bag and generously pipe onto the center of cookie. Place another cookie over it to make a sandwich and let sit for 2 hours or until marshmallow is firm.

For the coating:

In a double boiler, add all ingredients stirring continuously until melted. Gently place the marshmallow-filled cookies into the melted chocolate and coat evenly. Use a fork to take the cookie out and place on a nonstick baking sheet. Allow coating to cool completely before serving.
